quick chicken quesadillas

One of my favorite meals to fix when time is tight for dinner is quesadillas. They are super easy, super fast, and super tasty! Today on Low Carb Monday, I’m sharing with you my secret to enjoying quesadillas while keeping the carbs low. I found these low carb tortillas in the store by Mission and they don’t taste any different than regular flour tortillas and only have 6g of carbs.

I didn’t know at the time when I got a Quesadilla maker for Christmas, but this one kitchen appliance was going to be one of the most used in my kitchen for quick dinner options for the entire family.

I’m not one that usually purchases things that have one use. I don’t have a lot of storage space in my kitchen. In the past these types of things would get shoved in a cabinet and never used and eventually thrown out. However, this time, I felt like I had hit the kitchen appliance jack pot!

The Quesadilla maker is not only easy to use, but it cleans up quick with a non-stick surface, and stores nicely in the cabinet either laying down or if you lock the lid, you can store it standing up. The best part, it makes your quesadilla in about 5 minutes with no flipping! I never made quesadillas in a regular pan on the stove because I’m challenged at flipping things over. With the quesadilla maker, it cooks on both sides at once creating the perfectly crunchy quesadilla.

Making chicken quesadillas is one of those super easy meals that I fix when time is tight. I normally keep shredded chicken in the freezer along with onions and peppers. This eliminates most of the prep work necessary to create the perfect quesadilla.

I first will thaw out the veggies and chicken. Saute the veggies in a pan and add in the chicken towards the end. Season with your favorite fajita or taco seasoning. Don’t add water, just sprinkle the dry mix over top and mix well.

Place your tortilla, in this case, a low carb tortilla, on the pre-heated quesadilla maker. Add your veggies, chicken, and of course cheese! Top with the second tortilla and lower the lid. It will normally take between 3 to 5 minutes to get the perfect quesadilla. For the kids, I normally fix just cheese since they are still somewhat picky and they love them.

When using the low carb tortillas, the only difference I have noticed is that they don’t brown as much on top of the quesadilla, but the crispiness is still there!

Quick Chicken Quesadillas

Shredded Chicken
Onion, sliced in to smaller pieces
Green bell pepper, sliced in to smaller pieces
Shredded Mexican Style Cheese
Taco/Fajita seasoning, to taste

1. Cut up your onion and green bell pepper and saute until softened.

2. Add the shredded chicken in to the vegetable mixture.

3. Season with fajita or taco seasoning.

4. Place one flour tortilla on the quesadilla maker and spread the vegetable and chicken mixture evenly over the tortilla. Top with shredded cheese.

5. Place the second flour tortilla on top and close the lid. Cook for 3 to 5 minutes in the quesadilla maker.

6. Cut and serve with sour cream and salsa.
