Breakfast is one of those meals that seems to be hurried and it is easier to reach for something that is not as healthy when trying to eat low carb. At our house, mornings are CRAZY! I’m trying to get everyone fed, lunches packed, and out the door. This Quick Breakfast Quiche for 1 is one of my “go to” breakfast meals because it takes me a minute or two to put the ingredients together and then it bakes in the toaster oven while I’m feeding everyone else, packing lunches, getting clothes, etc.
I absolutely love having little ramekins for making this dish and other little quick dishes when I need to. If you haven’t gotten some yet, you need too as they are so helpful! I use them when I’m making dishes to separate out ingredients or for breakfast! I first spray a ramekin with non-stick cooking spray. I combine two eggs with a splash of milk and scramble with a fork. I then add in the ingredients that I have on hand or feel like having. In this case, I added in red and green bell peppers and onions. I also add in a dash of dry mustard, salt, and pepper.
Next, add in a protein. You can use deli ham torn up in to smaller pieces, pre-cooked sausage crumbles, or I used some bacon that I crumbled up. Finally, add some cheese. I use mild cheddar, but you can use any shredded cheese that you have.
Pour your mixture in to your ramekin and bake in a toaster oven at 400˚ for about 20 minutes. Remove the ramekin and let it sit for a few minutes. Run a knife along the edge to loosen and remove to a plate. You now have a great low carb breakfast that should keep you full for the morning! Enjoy!
Quick Breakfast Quiche for 1
Splash of milk
Dash of dry mustard
Salt/pepper to taste
Vegetables such as onions, peppers, or even brocolli florets
Protein – ham, sausage, or bacon
1/4 cup shredded cheese
1. Combine the eggs and milk and scramble with a fork.
2. Add a dash of dry mustard, salt/pepper.
3. Add in your veggies, protein, and cheese. Mix to combine.
4. Pour in to a ramekin sprayed with non-stick cooking spray.
5. Bake at 400˚ for about 20 minutes. Remove and let sit for 5 minutes and then enjoy!
