On Low Carb Monday this week, we take an easy classic, Pizza Casserole, and change the Rotini Noodles to Dreamfields to make this a great low carb meal! This meal is easy to get in the oven and on the table in no time on a busy weeknight. Eating low carb doesn’t mean giving up some of your favorite meals. Using a product like Dreamfields allows you to enjoy pasta and taste great and the rest of the family will never notice you have substituted low carb pasta for their meal.
One thing you need to be aware of when using Dreamfields noodles with red sauce. The red sauce, being that it is very acidic, will destroy the coating of the noodles that makes them low carb. This does not occur until you put the noodles away for left overs. It will not have an effect on the dish as you prepare it and serve it right away. If you are preparing this for a small family, so you don’t have left overs, cut the recipe in half!
First thing I do is to brown my ground beef and cook my noodles according to the directions on the package.
After I drain the noodles and the meat is cooked and drained, I combine my meat, noodles, and the spaghetti sauce in a large pan. This makes it easier to layer and also helps the noodles to not dry out when you bake.
Layer your noodle/sauce mixture, pepperoni, and cheese. Continue these layers one more time. Top with remaining cheese and bake!
Low Carb Pizza Casserole
1 box Dreamfields Rotini Noodles
1 lb ground beef, browned
1 jar spaghetti sauce
1 package pepperoni slices
3 cups shredded mozzarella cheese
1. Cook noodles according to the directions. Drain and set aside.
2. Brown the ground beef and drain off the grease.
3. Combine the beef and the spaghetti sauce.
4. Layer noodles, meat sauce, cheese, and pepperoni. Repeat layers.
5. Bake at 400˚ for 30 minutes, or until bubbly. If the cheese starts to turn brown, you can loosely cover with foil until the baking time is complete.
