In my quest to make as many things homemade as possible, I began searching for a Thousand Island recipe since it is my husbands favorite. It took a few to find one that we both liked and a few modifications to the one that I finally decided on. This one is worth the few minutes it takes to prepare. It is important to let it sit in the refrigerator for a while for the flavors to blend together. You can also make this dressing low-fat/fat-free and lower calorie by substituting the mayonnaise with light or fat-free and using relish sweetened with Splenda.

Thousand Island Dressing

1/2 Clove Garlic, minced
1/4 tsp Kosher Salt
3/4 cup Prepared or Homemade Mayonnaise (I prefer Hellman’s)
1/4 cup Bottled Chili Sauce
2 Tbsp Ketchup
1 1/2 Tbsp Minced Onion
2 tsp Sweet Pickle Relish
2 tsp Sugar

1. Combine the garlic and kosher salt and mash in to a paste with the back of a knife.

2. Mix the remaining ingredients in a small bowl and whisk together.

3. Season with salt and pepper to taste. Add more sugar if you prefer a sweeter dressing. You can also add some hard-boiled egg, finely chopped, if you prefer an egg in your dressing.

4. Refrigerate to allow the flavors to blend. Serve over your favorite salad. This will keep in the refrigerator for several days.
