One of my favorite breakfast options is to make crustless quiche. Not only is it easy, the options to customize are only limited by what is in your refrigerator. I usually will make a quiche for breakfast and then have a little more for lunch. It is one of my favorite high protein, low carb meals. This ham and broccoli crustless quiche comes together in about 30 minutes and is sure to be a hit for breakfast!

Start by scrambling 10 eggs with 1/2 cup of milk. If I have heavy cream on hand, I will use that instead of milk to make the eggs taste better.

Add in your ham, cheese, and broccoli. Stir. Add in a dash of salt and pepper.

Pour in to a greased pie plate and bake at 400˚ for 20-25 minutes. You want the eggs set.

Ham and Broccoli Crustless Quiche

10 eggs
1/2 cup milk
1 cup shredded cheddar cheese
1/2 cup of chopped/diced ham
Broccoli Florets, diced
salt/pepper

1. Combine the eggs and milk and scramble.

2. Add in the cheese, ham, and broccoli. With the broccoli, I normally buy a steamer pack of broccoli florets and microwave. Once cooked, I cut off the very tops of the broccoli and include that in my quiche mixture.

3. Add in a dash of salt/pepper.

4. Pour in to a greased pie plate and bake at 400˚ for 20-25 minutes, or until the eggs are set in the middle.
