Chicken and rice is one of those dishes that I love to fix when I need something in the oven quickly! This Easy Chicken and Rice recipe has little prep time and taste amazing! A great combination of onion soup mix, instant rice, and cream of mushroom soup. The chicken is coated in butter, salt, pepper, and paprika.

The first thing I do to get this dish in the oven is to coat my chicken breast by placing them in some melted butter that has salt, pepper, and paprika in it.

Next, I mix the onion soup mix, cream of mushroom soup, water, and sherry in a casserole dish.

Next, add in the instant rice and place your chicken pieces on top.

Bake in the oven! Serve this with a nice vegetable side and you have a complete meal for the entire family. The one thing I will mention is to check your chicken as you get closer to the end of the cooking time. The chicken can dry out if you bake to long.

Easy Chicken and Rice

1/2 envelope Onion Soup Mix
1 can Cream of Mushroom soup
1 1/3 cup instant rice
1/2 can water
1 1/4 cup boiling water
1/2 cup Sherry
4-5 Chicken Breasts
Melted Butter
Salt/Pepper in the butter mixture
1 tsp paprika

1. Mix the soup mix, mushroom soup, water, and sherry in a 9 x 13 casserole dish.

2. Add the instant rice

3. Combine melted butter with salt/pepper and paprika. Coat chicken pieces.

4. Place the chicken on top of the rice mixture.

5. Bake at 350˚ for 45 minutes to 1 hour and 15 minutes. Cooking times will depend in your oven and how thick your chicken breast are. If they are thinner, check them at 30 minutes and see if they are done. Continue cooking until chicken is cooked through.
