BBQ Chicken Quesadillas - Detours in Life

It is low carb Monday once again and we are revisiting quesadillas for this quick and easy Barbeque Chicken Quesadillas recipe! When using the Mission Carb Balance tortillas, this quick quesadilla recipe keeps the carbs low and taste out of this world! Dinner can be on the table in under 15 minutes with this recipe which is great for those busy nights.

I always keep shredded chicken in the freezer for casseroles, quesadillas, and other recipes. I normally will get some shredded chicken out of the freezer and thaw in the microwave. Place in a small sauce pan with your favorite BBQ sauce and warm. Use just enough sauce to coat the chicken. If you use to much, it might make the quesadilla to wet.


I put onions in everything, especially quesadillas. I slice up some onions and sauce them quickly in a small frying pan.

Then assemble your quesadilla on the Quesadilla maker. If you read my previous quesadilla post, here, you know how much I LOVE my quesadilla maker. If you haven’t gotten one, you need too because it makes meals quick, easy, and clean up is a breeze! I place the chicken on the bottom on the first tortilla, then place onions, then monterey jack cheese on top. Put on the top tortilla and cook for about 5 minutes!


BBQ Chicken Quesadillas

Shredded Chicken
Favorite BBQ Sauce
Mission Carb Balance Tortillas
Onions, optional
Monterey Jack Cheese

1. Heat shredded chicken on the stovetop with your favorite BBQ sauce. Use just enough sauce to coat the chicken.

2. Saute some onions if you love onions – optional.

3. Assemble the quesadilla by placing one tortilla on the quesadilla maker. Top with shredded chicken, onions, and monterey jack cheese. Place a second tortilla on top and cook for about 5 minutes!
