As the winter is approaching, I LOVE to use my crock pot to fix hearty and warm meals with ease. When I am wanting a different type of chili, I fix this wonderful chicken chili. You can make it as mild or as spicy as you want! This will also freeze well, so you can take the remaining meal and freeze for later on. This would also work well to fix ahead of time and freeze the entire batch. When you are ready to use it, thaw it in the fridge and reheat on the stove. 

The fix thing is to place the following ingredients in the crock pot: beans, onion, corn, tomato sauce, and diced tomatoes with chiles. If you want it milder, just use plain diced tomatoes. If you want it spicier, use a can of Rotel. If you can not find diced tomatoes with chiles and want it in between – I would use a can of diced tomatoes and then 1/2 can of diced green chiles. If you don’t have already cooked chicken, you could also place some frozen chicken breast in the bottom of the crock pot prior to putting all the ingredients in. 

Then you will add in your seasonings: my homemade taco seasoning, cumin, and chili powder. 

Cover and cook on low for 1o hours or on high for 6 hours. As you are nearing the end of the cooking time, I place in some already cooked and shredded chicken that I make in batches and freeze for meals like this. If you put the frozen chicken breast in at the beginning, you will want to remove those and shred them with a fork and return the shredded chicken to the chili. 

Amazing Chicken Chili 

1 onion, chopped
1 16 oz can black beans, rinsed 
1 package of frozen sweet corn
1 package of taco seasoning, or you can use homemade taco seasoning
1 Tbsp chili powder
1 15 oz can kidney beans
1 16 oz can tomato sauce
1 28 oz can diced tomatoes with chiles or use the suggestions above
1 Tbsp cumin
4 chicken breast or 2 cups shredded chicken 

1. Place the chicken breast in the bottom of the crock pot if using frozen chicken breast. 

2. Add the onion, beans, tomato sauce, and diced tomatoes with chiles. 

3. Add the spices and stir. 

4. Cook on LOW for 10 hours or HIGH for 6 hours. 

5. If using already cooked, shredded chicken, put in the last 30 minutes of the cooking time. 

6. Serve with your favorite toppings: cheese, sour cream, or fresh cilantro.
